Stuffed Sardines

500 gr of fresh sardines
Crumb of bread wet of milk
3 eggs
olive oil
50 gr of parmisan
oregano
breadcrumbs

 

Clean the sardines, take the heads and the bones off. Crush 5 of them in the mortar; add the bread, 2 eggs, the cheese, the salt and the oregano. Mix accurately. Put the stuffing in every sardine and pass them in the remaining egg, then in the breadcrumbs and fry in abundant olive oil.
